Carrot & Basil Soup



  1. First, the day before making your soup, soak the basil leaves in the ½ cup of cream and keep in the fridge overnight. This way you gonna bring the strong taste of basil to the cream.

  2. Now, heat the butter in a saucepan, add in the shallot and cook until soften.

  3. Add the carrots, the dried basil and stir.

  4. Add the tomatoes, garlic powder, nutmeg then drizzle all with the chicken broth. Cover and keep cooking for 20 minutes.

  5. When the carrots becomes soft, blend them well using a hand mixer then return to the heat.

  6. Seasoning with salt, pepper and add the half cup of cream ( After removing the basil leaves).

  7. Cook for 5 extra minutes then serves with toasted bread.

2 Tbs butter
1 shallot, minced
