Creamy Cauliflower Soup with Mint Dukkah

  1. Cook the onion in the butter, in a deep pan.

  2. Add the cauliflower and stir.

  3. Add the flour, and stat to pour the broth gradually, stirring continuously.

  4. Seasoning all with cuin, salt, white pepper and cover. Keep cooking for 12 minutes aboves.

  5. Meanwhile, in a mortar, pestle the mint, garlic and a dash of salt until obtaining a smooth paste (Dukkah).

  6. Add the olive oil to and Keep aside.

  7. Now, remove the soup from the heat and blend using a hand blender.

  8. Return to the heat again, and add in the cream and cheese. Mix and allows to cook 5 more minutes.

  9. Serve the creamy soup drizzled with some spoons of the minty dukkah.
